Family Pictures and Pumpkin Bread

I sure hope you all enjoyed your lovely weekend!  Daylight savings always throws us off a little bit.  Even though we changed our clocks early Saturday evening - and kept the girls up to their 'normal' bed time - they still woke up very, very early!  I was one very tired mommy all day on Sunday, but still managed to get the energy to take some family pictures for Christmas cards. 
Being a busy family, we didn't know when we'd be free to schedule a photographer so we attempted to take them ourselves. 
This one is my absolute favorite!  I love my girls!
 
The temperature is dropping quickly and it has been a rainy week here in Iowa.  So my favorite way to warm up the house in the fall is to bake.  Today we made pumpkin bread... yummy!
 
Pumpkin Bread
(adapted from Simple Recipes)
yields one loaf
 
You will need:
  • 1 1/2 cups flour
  • 1/2 teaspoon of salt
  • 1/2 cup Splenda
  • 1 teaspoon baking soda
  • 1 cup pumpkin puree
  • 1/4 cup olive oil
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1/4 cup water
  • 1/2 teaspoon cinnamon
What you need to do:

1- Preheat oven to 350°F Mix together the flour, salt, Splenda, and baking soda.
2 - Mix the pumpkin puree, oil, applesauce, eggs, water, and cinnamon. Add to the dry ingredients. Remember - do not over mix. 
3 - Pour into a 9x5x3 inch loaf pan. Bake 50 to 60 minutes then test with a toothpick - poked in the very center of the loaf and if it comes out clean, it's done. Turn out of the pan and let cool.

I totally recommend doubling this recipe and baking two loaves.  Hannah and Mia loved it so much, we had half the loaf gone in no time!
